    Gourmet Recipes One Can Try At Home

    1. Palestinian Fattoush Salad

    Ingredients:

    1. 2 cups mixed greens
    2. 1 cucumber, diced
    3. 2 tomatoes, diced
    4. 1 red onion, thinly sliced
    5. 1 bell pepper, diced
    6. 1/4 cup fresh parsley, chopped
    7. 1/4 cup fresh mint, chopped
    8. 2 pita bread, toasted and broken into pieces
    9. 1/4 cup olive oil
    10. Juice of 1 lemon
    11. Salt and pepper to taste
    12. 1 tsp sumac

    Instructions to make: 

    1. In a large bowl, combine the mixed greens, cucumber, tomatoes, red onion, bell pepper, parsley, and mint.
    2. Add the toasted pita pieces.
    3. In a small bowl, whisk together olive oil, lemon juice, salt, pepper, and sumac.
    4. Pour the dressing over the salad and toss to combine.
    5. Serve immediately.

    2. Maqluba (Upside-Down Rice and Vegetable Dish)

    Ingredients: 

    •     For the rice:

    ○    2 cups basmati rice

    ○    1 tsp turmeric

    ○    1 tsp Mixed spices

    ○    ½ tsp of nutmeg (Optional) 

    ○    Salt and pepper

    ○    1 tp ground cinnamon

    •     For the vegetables and meat:

    ○    2 medium eggplants, sliced into 1/2 inch rounds

    ○    2 medium potatoes, sliced into 1/4 inch rounds

    ○    1 medium cauliflower, cut into florets

    ○    1 large onion, chopped

    ○    2-3 tomatoes, sliced

    ○    1 whole chicken, cut into pieces (or 1-1.5 lbs of lamb or beef)

    ○    3-4 tbsp vegetable oil

    ○    Salt and pepper 

    ○    Small cinnamon stick

    ○    1 tsp ground black pepper

    ○    cardamom

    ○    2 bay leaves

    ○    4-5 cups chicken broth or water

    Instructions:

    1. Prepare the rice:

    ○    Rinse the rice under cold water until the water runs clear.

    ○    Soak the rice in water for about 30 minutes, then drain well.

    ○    Mix the drained rice with turmeric, Mixed spices, nutmeg, cinnamon, Salt and pepper

    1. Prepare the vegetables:

    ○    Place the eggplant slices on a baking sheet, drizzle with some oil, and sprinkle with salt. Bake for about 20 minutes until tender and slightly golden.

    ○    Fry the potato slices in a skillet until golden and cooked through. Set aside on paper towels to drain excess oil.

    ○    Fry the cauliflower florets until golden and tender. Set aside on paper towels.

    1. Prepare the meat:

    ○    In a large pot, heat some oil over medium heat. Add the chopped onions and garlic, and sauté until softened.

    ○    Add the chicken pieces (or lamb/beef), season with salt, pepper, mixed spices, cinnamon, black pepper, and cardamom. Brown the meat on all sides.

    ○    Pour in enough chicken broth or water to cover the meat. Add bay leaves and bring to a boil. Reduce heat and simmer until the meat is cooked through (about 30-40 minutes for chicken, longer for lamb or beef). Remove the meat and set aside, reserving the broth.

    1. Assemble the Maklouba:

    ○    In a large, heavy-bottomed pot, layer the ingredients in the following order: start with the tomato slices at the bottom, then a layer of fried potatoes, followed by eggplant, and cauliflower.

    ○    Place the cooked meat on top of the vegetables.

    ○    Spread the spiced rice evenly over the meat and vegetables.

    ○    Carefully pour the reserved broth over the rice, ensuring it covers the rice by about 1 inch. Add more water if necessary.

    ○    Bring to a boil, then reduce the heat to low, cover, and simmer for about 30-40 minutes until the rice is cooked and the liquid is absorbed.

    3. Za’atar Manakish (Flatbread with Za’atar) 

    Ingredients required:

    1. 2 cups all-purpose flour
    2. 1 teaspoon salt
    3. 1 teaspoon sugar
    4. 1 teaspoon instant yeast
    5. 3/4 cup warm water
    6. 1/4 cup olive oil
    7. 1/4 cup za’atar spice mix

    Instructions to make: 

    1. In a large bowl, combine the flour, salt, sugar, and yeast.
    2. Gradually add the warm water and olive oil, mixing until a dough forms.
    3. Knead the dough on a floured surface for 5-7 minutes, until smooth and elastic.
    4. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour, or until doubled in size.
    5. Preheat the oven to 220°C (430°F).
    6. Divide the dough into 4 equal portions and roll each into a circle.
    7. Place the dough circles on a baking sheet lined with parchment paper.
    8. Mix the za’atar spice with olive oil to form a paste. Spread the paste evenly over each dough circle.
    9. Bake for 10-12 minutes, or until the edges are golden brown.
    10. Serve warm.
